Researchers from the University of California-Davis and the Illinois Institute of Technology have shown that consuming strawberries declines inflammatory markers which were accompanied by significant increases in pelargonidin sulfate and pelargonidin-3-O-glucoside, two compounds found in strawberries. Strawberries are an important source of antioxidants and anti-inflammatory phytonutrients, including anthocyanins like cyanidins and perlargonidins; flavonols like catechins, epicatechins and quercetin; hydroxyl-benzoic acids like ellagic acid, salicylic acid; and resveratrol.

Red Blossom Smoothie
- Servings: 2
- Preparation time: 5 minutes

Ingredients
- 1 cup calcium fortified orange juice
- Half a cup silken tofu
- 16 ounces frozen strawberries
- A pinch of cinnamon powder ( optional )
- Ice (about 1 cup crushed )
- Honey (As per taste)

Directions
1. Blend all ingredients in a blender
2. Serve in a tall glass
3. Enjoy!

Fantastic recipe Roy! Thank you for sharing it with us. To all those who are a little confused by all the terms that were used - don't worry. He is simply showing that fruits, especially strawberries have a lot of vitamins and minerals which are essential to human health. Research has shown that strawberries are one of the fruits with the most number of vitamins. This is probably why it is considered to be a slightly more expensive type of fruit.

However, it is delicious, and the shake here looks mouth-watering. I've not tried it yet (at the time of this writing), but I certainly will be getting down to it really soon!
